Mexican Pizza ~ What’s For Dinner Thursday

OK…it’s back!  What’s for dinner Thursdays!  Woot.  I know your feeling it, right?  Your ready for some new recipes, so here ya go! *smiles*

What do you need?
  • 2 pounds ground beef
  • 1 can refried beans {we used Taco Bell brand}
  • 6 flour tortillas
  • 2 cups Mexican blend shredded cheese
  • shredded lettuce
  • 1 medium tomato, chopped
  • 3 slices onion, chopped
  • sour cream
What do you do?
  1. Add ground beef and onion to a skillet and cook until the meat is no longer pink and the onions are translucent.
  2. I like to heat up the refried beans to make them easier to spread.  So if you want to do this, heat them up when the meat is almost done.
You’ll want to set up a little station…Heat one tortilla in a large non stick skillet {on both sides} or you can use your glass top stove if you have one. {then you don’t have to wash a skillet *smiles*} Lay this tortilla on a large pan {oven safe} and spread enough refried beans to cover the bottom. Heat another tortilla on both sides and put on top of the refried beans, add a layer of meat and then cheese. Do this until you are finished. 
Place these under the broiler in your oven until the cheese is bubbly. When these are finished top with lettuce and tomato.  Slice like a pizza and add a dollop of sour cream to each slice. Enjoy!

This is so yummy...I make this but I do mine without fried beans but the rest of the family gets it with that....

Glad to see your recipe day back...I missed it.
