Lime Grilled Chicken with Grilled Chili Toasts

We have been eating the same things over and over again lately.  Frankly, I am burnt out.  While making our bi-weekly menu last week I decided that I would pull out my cook books and figure out a few new ideas. 

I pulled out one that Kayla got me years ago for Christmas it’s by Rachel Ray.  I have made one thing from it in the years that I’ve had it but decided that there were quiet a few things that sounded really yummy to me and this recipe was one of those.  I paired this with grilled asparagus.  {the kids and Zack love it!}

What do you need?

  • zest and juice of 2 limes
  • 1/4 cup extra virgin olive oil
  • 2 large garlic cloves, crushed
  • 1 jalapeno pepper, halved and seeds removed
  • 1/2 cup fresh cilantro leaves
  • 1 tbsp cumin
  • salt and black pepper
  • 6 boneless skinless chicken breasts {I only used 4}
  • 5 tbsp softened butter
  • 1 tbsp chili powder
  • 8 thick slices crusty, country style bread {I used a baguette}

What do you do?

  1. Preheat oven to 375 degrees.
  2. In a blender or food processor, combine the lime zest and juice, extra virgin olive oil, jalapeno, cilantro, cumin, salt and pepper.  Puree until smooth; add a splash of water if needed.
  3. Put chicken in a bowl or zip top baggie and pour the marinade over it. Marinate for 10 minutes.  {I marinated it for about 45 minutes}
  4. Preheat a grill pan on high heat. 
  5. Sear the chicken breasts for 2 minutes on each side.  Transfer them to a baking dish and place in oven for 15 minutes or until they are cooked through.
  6. In a small bowl combine the softened butter and chili powder.  Spread the chili butter on both sides of the bread slices.  Lower the heat on the grill pan and char the bread on both sides.  Serve alongside the chicken.

This recipe was so good!  I am not a big lime fan but this was just enough where it wasn’t over the top.  I can’t wait to make this again!

That looks so yummy! I think I need to try asparagus again. The last time I made it everybody hated it, but yours looks really good!

Oh my...that looks amazing. That asparagus looks just delicious...I need to make some. I know what you mean about being burnt out with the same things all the time. Good for you for cooking out of the box.

Now this does look great. We are huge chicken eaters.
I agree with the food burn out. Donnie loves the same foods over and over agin, but I like to switch it up a little. So I try to sneak in a few new recipes at least once a week.
