Poppy Seed Chicken – What’s for Dinner Thursday

This recipe came from my sister n law.  She always has the easiest, fast go to it dishes.  This is one of my favorites!
What do you need?
  • 6 large chicken breasts, boiled, drained and cubed
  • 2 cans cream of chicken soup
  • 16oz sour cream
  • salt and pepper to taste
  • 2 level tbsp poppy seeds, divided
  • 1 sleeve of crackers {Ritz is a good choice}
  • 1/2 stick butter
What do you do?
  1. Once you have your chicken breasts boiled, drained and cubed you put them in a large bowl and mix in the 2 cans of cream of chicken soup, sour cream and 1 tbsp poppy seeds.
  2. Once you have this mixed together you put this mixture into the bottom of a large casserole dish. I add my salt and pepper now.  Crush your crackers and layer on top. 
  3. Melt the butter and drizzle over the top.  Sprinkle about the remainder 1 tbsp poppy seeds on top of this.
  4. Bake at 300 degrees for about 30 minutes.

I love a good baked chicken recipe, especially one that includes sour cream. I really need to step out of the box and try some new recipes.

This is so good. I have had it several times and it seems really easy to make. I will have to add it to my chicken menu list.
