Pumpkin Scones {52 Cookies in a Year – Week 11}

So last week I wasn’t able to post any cookies because Kelsie was just sick and I was out of it.  I am now coming down with some sort of bug but nothing like what she had. {thank goodness}

But none the less, we couldn’t go two weeks without something yummy. *smiles*  So I pulled out my Top Secret Recipes Cookbook and got to making the recipe for Starbucks Pumpkin Scones.  I have never had the original nor seen them at all, but I can tell you that these are SO good!  We have made them in our home for the past 3 years.

What will you need?

  • 2 cups all purpose flour
  • 7 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/4 teaspoon ginger
  • 1/2 cup canned pumpkin
  • 3 tablespoons half and half
  • 1 egg
  • 6 tablespoons cold butter

Plain Glaze:

  • 1 cup plus 1 tablespoon powdered sugar
  • 2 tablespoons whole milk

Spiced Glaze:

  • 1 cup plus 3 tablespoons powdered sugar
  • 2 tablespoons whole milk
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • pinch ginger
  • pinch cloves

What do you do?

  1. Preheat oven to 425 degrees
  2. Combine flour, sugar, baking powder, salt, cinnamon, nutmeg, cloves and ginger in large bowl
  3. In a separate bowl, whisk together pumpkin, half and half and egg
  4. Cut butter into cubes then add it to the dry ingredients.  Use a fork to combine.  Continue mixing until no chunks of butter are visible
  5. Fold wet ingredients into dry then form the dough into a ball.  Pat out dough onto a lightly floured surface and form into a 1 inch thick rectangle that is about 9 inches long and 3 inches wide.  Use a large knife or pizza wheel to slice the dough twice through the width making 3 equal portions.  Cut those three slices diagonally so that you have 6 triangular slices to bake.   {I have never gotten this part right, my dough has always been too moist to do anything with, so I just pour it onto my greased pan and bake, then cut}
  6. Bake for 14 to 16 minutes on a baking sheet that has been lightly oiled.  Scones should begin to turn a light brown.
  7. While scones cool, prepare plain glaze.  Use a brush to paint the glaze on.  Allow to harden
  8. Prepare the spiced glaze and drizzle on top.

I've missed a couple weeks of posting cookies but am back on board now!! Your scones look sooo good - I'm picturing myself eating one with a cup of coffee. YUMMMM. Hope your daughter's all better now and hope you have a good day ~ ♥
