Lemon Thyme Chicken Spaghetti with Garlic Sauce

Ok, so when I found this recipe on Pinterest, I knew that I wanted to try it.  It was easy and included two of my favorite things;  chicken and garlic. :-)

Well we had the chance to try it out Saturday night and I adjusted the recipe a little more to suite our tastes and OMGoodness, it was fantastic!!  We all loved it so much and will definitely be having this again.

What do you need?

  • 2 large boneless skinless chicken breasts, cut into 1 inch cubes
  • your favorite spaghetti noodles {we use a mix of wheat and reg}
  • 1 tsp thyme
  • 1 1/2 tbsp lemon juice
  • 6 tbsp EVOO
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup butter
  • 6 large cloves of garlic, minced
  • 2 tbsp all-purpose flour
  • 2 1/2 cups chicken stock
  • 2 tbsp fresh basil
  • 3/4 cup grated parmesan cheese
  • 2 cups whole cherry tomatoes

What do you do?

  1. Mix together the thyme, lemon juice, 2 tbsp evoo, salt and pepper.  Add this to a large bag to marinate your chicken pieces.  I marinated mine for about 2 hours.
  2. Sauté your chicken in 2 tbsp evoo. When cooked through, set aside.
  3. Cook your noodles while you making the garlic sauce.
  4. To make your garlic sauce you want to place a large pan over medium heat and add the butter and 2 tbsp evoo. 
  5. Once the butter has melted, add your garlic and sauté until it’s soft.  Be careful not to burn it! ;-)
  6. Add the flour and cook for one minute.
  7. Add the chicken stock and simmer until the sauce is thickened.  It took about 15 minutes over medium high heat to get the thickness that I wanted.
  8. Add basil and stir.  Add chicken and noodles. 
  9. Finally add the parmesan cheese, stir thoroughly and then add the cherry tomatoes.
