Grilled Chicken with Pineapple Salsa

It’s hot outside and we are firing up our grill.  I really love being able to pass the cooking to Zack during the warmer months.  We usually grill out a lot during the Summer and we don’t always do hamburgers and hotdogs.

This recipe not only tastes delicious but is good for you as well!

What do you need?

  • 2 cup coarsely chopped pineapple
  • 2 garlic cloves, minced
  • 1 tsp dried rosemary (or any herb)
  • 1/4 tsp salt
  • 2 tsp freshly ground black pepper
  • 1 cup water
  • 1 lb chicken breast
  • For the pineapple salsa:

  • 2 cup diced pineapple
  • 2 large tomatoes, cored and diced
  • 1/2 cup chopped baby spinach
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 tbsp fresh cilantro
  • 1/4 tsp salt (to taste)
  • What do you do?

    1. Place the chopped pineapple, garlic, rosemary, salt, and pepper in a blender.  Blend until you reach a bbq sauce consistency.  Add water as needed.

    2. Place chicken in a large zip top bag; turn bag to coat.  Marinate for at least 30 minutes.

    3. While the chicken marinates, make the pineapple salsa. {mix all the ingredients together and let sit at room temp for at least 10 minutes or so to meld the flavors together.

    4. Heat grill to medium.  Place chicken on grill and cook until cooked thorough. 

    5. Serve with salsa on top of chicken.
