Creamy Chicken Enchiladas

I think I have found a new love. This is creamy, cheesey, chickeny and oh so good! I ran across this recipe on a blog that I read, I Heart Naptime. I think y’all are gonna love this!april 2011 008

What do you need?

  • 1/4 cup butter
  • 1/2 to 1 onion, chopped
  • 1 can green chilies
  • 8oz package cream cheese
  • 2 cups Mexican style shredded cheese
  • 1/4 cup salsa
  • 4 boneless skinless chicken breasts
  • 1 can Enchilada sauce
  • 1/2 cup heavy whipping cream
  • Flour tortillas

What do you do?

  1. Cook chicken and shred it up.
  2. Sautee butter, onion and green chilies.
  3. Mix in the salsa, cream cheese and 1 cup cheese.
  4. Once cheese has melted add the shredded chicken.
  5. Place about 3 heaping tablespoons into tortillas and roll up. Place in a 9X13 inch pan.
  6. Mix together enchilada sauce and heavy whipping cream. Pour over the enchiladas. Cover with the remaining cheese.
  7. Bake at 350 degrees for 20 minutes covered and 10 minutes {or until cheese is bubbly} uncovered.

Sounds yummy and cheesy! I've made a similar that uses a can of cream of chicken soup.

Wow, that does look good. The cream cheese had me and I couldn't believe the heavy whipping cream. Another great recipe.
