A Recipe! Chicken Chimichanga

We love fast easy dinners in our house.  But they have to be tasty too and this is one not only gets rave approvals, but is so simple to make.

What do you need?

  • 3 to 4 large boneless skinless chicken breasts, cubed
  • 1 cup of your favorite salsa
  • 2 tbsp.taco season
  • flour tortillas
  • shredded cheese
  • shredded lettuce
  • diced tomatoes
  • sour cream

What do you do?

  1. Preheat oven to 350 degrees.
  2. Drizzle about a tbsp of EVOO into a skillet and heat over medium high heat.  Cook your diced chicken breasts until no longer pink.
  3. Add your chicken to a food processor and give it about 3 or 4 pulses.  Your not looking for puree, but you want your chicken some what chunky and shredded.
  4. Put the chicken back in your skillet and add 2 tbsp taco season and your salsa.  Mix together until heated thoroughly.
  5. Lay out your tortilla shell, add chicken mixture to your shell and then top with some shredded cheese.  Fold your shell all up. {maybe you can get the idea of the fold by the picture above}
  6. Finish all your tortillas and bake for about 15 to 20 minutes.  You may want to turn them over and heat a little longer.  Your basically now browning them to your likeness.

Yes, I know that this isn’t the traditional chicken chiminchanga but it’s easy and yummy and it’s our version! :-)

Anything Mexican (well, almost anything) is OK with me. Your meal looks yummy. I really need to work on making different meals...baked ziti is getting old.
