I was starving the other day for lunch and made these yummy things and decided that it would be a terrific dinner idea.
To make this easier I used the Tyson Grilled Ready strips that are all ready, just heat and eat! But you could totally do this with left over chicken or even grill up the chicken right then and there for dinner.
What do you need?
- Grilled Chicken Breasts Strips
- Your favorite bbq sauce. We love Jack Daniels Master Blend
- Whole Wheat Tortillas, I find that Archer Farms brand from Target is the best.
- Colby/Jack shredded cheese
- Lettuce, shredded
- Tomatoes, diced
- Sour Cream
- Either grill or heat up your chicken breasts and cut into strips if they aren’t already.
- Toss with bbq sauce, enough to thoroughly coat the chicken.
- Heat a large skillet over medium high heat and toss in your tortilla shell. Heat one side and then turn over and lay out a layer of cheese.
- When the cheese just starts to melt add your chicken breasts on half of the tortilla and fold the other side over. Use your spatula and “mash” onto the skillet to get that side crisp. Check and turn over and repeat with the “mashing”.
- When both sides are crisp take out and slice in half. Serve with your lettuce, tomatoes and sour cream.
