This recipes comes from one of the cook books that I have from her. It’s yummy, easy and a different take on meat loaf. This is definitely not your moms meat loaf! *smiles*
What do you need?
- 1 1/2 pounds ground beef
- 1/2 cup bread crumbs
- 1/2 cup Mexican shredded cheese
- 1/2 cup bottled chunky salsa
- 1 egg
- 2 tbsp chopped fresh cilantro
- 1 tsp crushed garlic
- 1 packet taco season mix
- 2 slices thick but bacon
- Heat oven to 350 degrees.
- In large bowl, combine beef, bread crumbs, cheese, 1/4 cup salsa, egg, cilantro, garlic and taco season.
- Form mixture into a loaf and place in loaf pan or in a baking dish, place bacon on top.
- Bake for 45 minutes or until internal temp reaches 160 degrees.

I love just making meat with taco seasoning and eating it in a bowl, so this should really strike my fancy!
