Taco Meat Loaf ~ What’s for Dinner Thursday!

I love Sandra Lee!  Her cook books are my absolute favorite and so are her ideas/recipes.
This recipes comes from one of the cook books that I have from her.  It’s yummy, easy and a different take on meat loaf. This is definitely not your moms meat loaf! *smiles*

What do you need?
  • 1 1/2 pounds ground beef
  • 1/2 cup bread crumbs
  • 1/2 cup Mexican shredded cheese
  • 1/2 cup bottled chunky salsa
  • 1 egg
  • 2 tbsp chopped fresh cilantro
  • 1 tsp crushed garlic
  • 1 packet taco season mix
  • 2 slices thick but bacon
What do you do?
  1. Heat oven to 350 degrees.
  2. In large bowl, combine beef, bread crumbs, cheese, 1/4 cup salsa, egg, cilantro, garlic and taco season.
  3. Form mixture into a loaf and place in loaf pan or in a baking dish, place bacon on top.
  4. Bake for 45 minutes or until internal temp reaches 160 degrees.

I love just making meat with taco seasoning and eating it in a bowl, so this should really strike my fancy!
