Pork Medallions with Creamy Pesto and Ranch Mashed Potatoes ~ What’s for Dinner Thursday

You remember the other day when I wrote about us trying out new recipes each week?  Well, I pulled two recipes to go shopping for and it was just by chance that the two recipes we would eat at the same time because they go perfect together!

Pork Medallions w/Creamy Pesto
What will you need?
  • 1 1/2 pounds pork tenderloin, sliced 1 inch thick
  • 1 tbsp plus 2 tsp Italian dressing, divided
  • Flour
  • 2 tbsp oil
  • 1 can (10.5oz) white sauce {Aunt Penny’s}
  • 2 tsp lemon juice
  • 1 container (7oz) premade Pesto
What do you do?
  1. Using a mallet, pound pork slices into 1/4 inch thick.  Season with 1 tbsp Italian dressing.  Dredge in flour, shake off excess.
  2. In large skillet, heat oil over medium high heat and cook pork for 3 to 4 minutes per side or until done.
  3. In medium saucepan, over medium heat, heat white sauce.  Stir in remaining 2 tsp dressing, lemon juice and pesto. Heat through and drizzle medallions with sauce.
Ranch Mashed Potatoes
What do you need?
  • Potatoes that have been peeled, cut, boiled and drained ready to mash
  • 1 packet ranch seasoning salad dressing mix
  • 1/4 cup sour cream
  • 1/2 tsp crushed garlic
What do you do?
  1. Add all ingredients to bowl and mash with potato masher or use a mixer to cream them to your desired consistency.
We have found that these will be a couple of recipes that we will definitely be adding to our weekly meals.  They are delicious! Kayla decided that they are her favorite!  Oh…white sauce??  I could not find this at Target, Publix or Walmart.  SO…I just bought Alfredo Sauce {classic} and used this instead.  If you happen to have white sauce in your area, by all means use it!  But if not or you have some Alfredo on hand…it was a really great substitute!
