Shortbread Cookies {52 Cookies in a Year – Week 6}

Looking for something easy to bake this week, I just wasn’t in a baking mood.  Plus we still had some of those cookies from last week.

I started looking around Food Network’s site and ran across Ina Garten’s short bread cookie recipe.  Not many ingredients so I decided to go with it.  Glad I did too, these are yummy!  I didn’t make them a whole lot because the dough made SO much.  I am going to make thumb print cookies from the rest of it! 

What do you need?

  • 3/4 pound unsalted butter, at room temperature
  • 1 cup sugar, plus extra for sprinkling
  • 1 teaspoon pure vanilla extract
  • 3 1/2 cups all-purpose flour
  • 1/4 teaspoon salt

What will you do?

  1. Preheat oven to 350 degrees.  Mix together your butter and sugar, be sure not to over mix here.
  2. In separate medium bowl, sift together your flour and salt.  Add to your butter/sugar mixture.  Mix together until the dough nearly starts to come together. 
  3. Dump onto a surface that has been dusted with flour and form into a flat disc.  Cover with plastic wrap and refrigerate for 30 minutes.
  4. Roll the dough into 1/2 inch thick and use a 3 by 1-inch finger-shaped cutter. (I just used what I had on hand here and also just used the pizza cutter to slice a few out)  Bake on ungreased cookie sheet for 20 to 25 minutes, until the edges begin to brown.

Excuse the horrible picture…The kids had my camera last and I didn’t realize the lens was so dirty until I uploaded these…I would have retaken the photo but the kids ate all the cookies!

I love Ina - wouldn't you love to just go stay at her house for the weekend?? She seems like she would be the perfect hostess - and we know we'd eat well! These cookies sound really easy and I like easy, so I'll have to give them a try. Have a great day ~ ♥
