Updated Traditions - French Toast Casserole

Thank you to Log Cabin for sponsoring my post about updated traditions in my household. I was selected for this sponsorship by the Clever Girls Collective, which endorses Blog With Integrity, as I do.
One thing that I remember growing up as a kid was eating breakfast for dinner. We would do everything from pancakes and sausage to eggs, toast and bacon. The one thing I do remember fondly, which we very rarely ate, was French toast. I am guessing it was because there was so many steps to take before it could be cooked. Soaking the bread in the egg and what not. However, while thinking on this week night favorite of mine that didn’t happen all to often, I wondered how I could make this something that my kids could enjoy during the weeknights {or on weekend mornings} without taking my whole evening to prepare. I started thinking along the lines of French Toast casseroles. This I knew was something that would work because I could prepare it the day before and keep it in the fridge until it was ready to be baked. Ahh..super easy week night dinner or weekend morning breakfast! However, after searching through all the recipes I could find I only found recipes with French bread and what not. I remembered seeing this one type of bread at Publix and thought…what a perfect French Toast bread. So I grabbed a loaf and created this updated version of an old time favorite!

What do you need?
  • 1 loaf of Breakfast Bread from Publix {it’s in their bakery section}
  • 1 cup milk
  • 4 eggs
  • 1/4 cup heavy whipping cream
  • 1 1/2 tsp vanilla
  • 1 cup brown sugar
  • 1/3 cup sugar
  • 1/3 cup flour
  • 1/3 cup butter
What do you do?
  1. Slice and cube bread to fill an 11X7 inch baking dish.
  2. Mix together the eggs, milk, whipping cream, and the vanilla.
  3. Pour over the bread mixture.
  4. Cover tightly with foil and refrigerate at least an hour or until your ready to use. Over night is even better.
  5. When your ready to bake, preheat oven to 350 degrees.
  6. Mix together the brown sugar, sugar flour and butter.
  7. Crumble all over the top.
  8. Bake for 45 minutes to an hour.
Top with your favorite Log Cabin syrup and enjoy!

I love this recipe. I have never made French toast as I had heard how time consuming it was, but this sounds great.
Thanks for sharing!
