What’s for Dinner Thursday? Mexican Lasagna

august 2010 001
This is a no brainer, lasagna is delish and so is Mexican food, put the two together and it’s SO good!
What do you need?
  • Flour Tortilla shells
  • 1 can refried beans
  • 2 pounds ground beef
  • 3 cups pepper jack cheese
  • 1/2 onion diced
  • 1 can green chilis
  • 1 taco season packet
  • toppings {shredded lettuce, chopped tomatoes, sour cream}
What do you do?
  1. Cook your ground beef with your diced onion until your beef is no longer pink.  Drain your grease and add your taco season packet and your green chilis.  Mix together.
  2. In a 9X9 {brownie dish} baking dish layer a tortilla shell, refried beans, ground beef and cheese, continue until your meat is all gone.  Once you get to the end of your meat top with cheese and bake on 350 degrees until the cheese is nice and bubbly. Cut the same way you would a lasagna and serve with your toppings.
Enjoy!

Yum! I've made this before, but yours looks way better than mine. I think it's because I didn't use enough cheese:)
