This recipe came about from an oops. I was planning on making meat loaf for dinner, got to the kitchen and discovered we were out of eggs! So, I began thinking, what can I do with hamburger meat? We were already planning on having river potatoes for dinner with the meat loaf and I had already peeled and cut up my potatoes and they were soaking in water. I didn’t have any buns to make hamburgers with. So I thought about mixing the two together…and thus was born cheeseburger hash!
What do you need?
- 1 1/2 pounds ground beef
- 1/4 cup of bacon bits
- 4 peeled and cubed potatoes
- 2 cups shredded cheddar cheese
- 1/4 cup chopped onions
- 3 tsp salt, divided
- 2 tsp pepper, divided
- 1/2 tsp garlic powder
- 1 tsp paprika
- 1 tbsp Olive Oil
- flour for coating
- Heat skillet over med high heat with olive oil.
- While the oil is heating up lightly dust your potatoes in the flour. {not too much}
- Add potatoes to skillet, stir in 2 tsp salt and 1 tsp pepper. Cook until potatoes are golden brown, then cover to steam them until they are done. About 10 minutes or so.
- Transfer potatoes to a bowl.
- Cook your hamburger meat with the onion, paprika, garlic powder and the remainder of salt and pepper. When the meat is done add the potatoes back in, heat turned off.
- Mix in bacon bits, sprinkle the cheddar cheese over the top and put in the oven under the broiler.
- Melt until cheese is bubbly all over. Allow to cool and enjoy!
