Loaded Baked Potatoes {What’s For Dinner Thursday}

Some nights I want quick meals, but sometimes quick meals aren’t always that nutritious.  This one will not only get on the dinner table in 30 minutes it’s also not so bad for you!

What do you need?
  • 4 baking potatoes {washed}
  • 1 lb ground beef
  • 1/4 lb Velveeta, cubed
  • 1 small tomato, chopped
  • 1/4 cup onion, chopped
  • 4 slices of bacon, chopped {you can substitute this with bacon bits}
  • 1 tsp minced garlic
  • 1/4 tsp chili powder
  • 1/4 tsp pepper
  • salt to taste
What do you do?
  1. Get your potatoes into the microwave!  It took mine 25 minutes to get ready but I used BIG potatoes.
  2. Cook ground beef, seasonings and onion in the skillet until browned.  Drain grease. 
  3. Add cheese, tomato, bacon and garlic.  Cook and stir until the cheese is all melted.
  4. Top potatoes with mixture and add a dollop of sour cream.
Enjoy!  We had this the other night and it’s so yummy!  The kids love it!
