It’s fall and we love pumpkin! I am going to really try and use it this year in all my baking besides my normal pies and scones that I make. {scone recipe coming soon} So I was Googling pumpkin cookies and came across the Libby’s website and knew that these cookies had to be good! I added white chocolate to mine because for some reason I wanted white chocolate and pumpkin. They are so easy to make and so yummy! Enjoy!
What do you need?
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 1/2 cups granulated sugar
- 1/2 cup butter (1 stick), softened
- 1 cup LIBBY'S® 100% Pure Pumpkin
- 1 large egg
- 1 teaspoon vanilla extract
- Glaze – I didn’t glaze them..I am trying to save the calories and they are good without it!
What do you do?
1. PREHEAT oven to 350° F. Grease baking sheets.
2. COMBINE flour, baking soda, baking powder, cinnamon, nutmeg and salt in medium bowl. Beat sugar and butter in large mixer bowl until well blended. Beat in pumpkin, egg and vanilla extract until smooth. Gradually beat in flour mixture. Drop by rounded tablespoon onto prepared baking sheets.
3. BAKE for 15 to 18 minutes or until edges are firm. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Drizzle Glaze over cookies.

I actually made these exact cookies the other night except I made them with regular chocolate chips - they are delicious!

Yummy! My daughter just made some gluten free pumpkin cake the other day. We are with you, we are trying to incorporate more pumpkin goodies this holiday season: Pumpkin pie, pumpkin cookies, pumpkin cake. I love your 52 cookies in a year, it's motivating me to spend more time in the kitchen!
