White Chocolate Mixed Nut Cookies {52 Cookies in a Year}

I love chocolate!  All kinds in fact from milk to white, dark is my favorite and I even like bitter sweet!  {hint for next week’s cookie recipe}

The only thing that I am not fond of is nuts.  I love peanuts, pecans and pistachios but after that you pretty much have to force them on me.  That is until you put them on top of ice cream or cover them in chocolate.  {ding, ding}

This was a recipe for white chocolate macadamia nut cookies and I just used a can of chopped mixed nuts. {peanuts, pistachios, pecans, walnuts, macadamia, and other varieties.  I found this little can at Target for like $2 so it was perfect!

What will you need?

  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup butter, softened
  • 1/2 cup shortening
  • 1 tsp vanilla
  • 1 egg
  • 2 1/4 cups all purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 60z white chocolate (I used baking bars cut into chunks, you can use white chocolate chips)
  • 3.25 oz mixed nuts (chopped)

What do you do?

  1. Heat oven to 350 degrees.  In large bowl, beat sugars, butter, shortening, vanilla and egg until light and fluffy.  Stir in flour, baking soda, and salt. {dough will be stiff}  Stir in chocolate and nuts.
  2. Drop dough by rounded spoonfuls onto ungreased cookie sheet about 2 inches apart.
  3. Bake 11 to 13 minutes or until light brown.  Cool aprx 2 mins, remove from cookie sheet to cooling rack.

Rondell and I love white chocolate chip cookies but with no nuts. I'll have to try this one minus the nuts because yours look really good.

My daughter and I used your peanut butter cookie recipe this last weekend. Yum!! And I had just told my step-daughter I needed to find a recipe for white chocolate nut cookies to make the next time shes here. So a week from Saturday you know what we will be making. Look forward to seeing what other cookie recipes you come up with.
