Peanut Butter Cookies {52 Cookies a Year}

What do you need?

  • 1/2  cup sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup peanut butter
  • 1/4 cup shortening
  • 1 egg
  • 1/4 cup butter, softened
  • 1 1/4 cup all purpose flour
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • additional sugar

What will you do?

  1. Heat oven to 375 degrees.  In large bowl, beat sugar, brown sugar, peanut butter, shortening, butter and egg.  Stir in flour, baking soda, baking powder and salt.
  2. Shape dough into 1 1/4 inch balls.  On ungreased cookie sheet, place balls about 3 inches apart.  Dip dough ball into sugar, top only, and then flatten with fork in criss cross patterns.
  3. Bake 9 to 10 minutes or until light brown.  Cool 5 minutes, remove from cookie sheet to cooling rack.
